Jerk Sweet Potato Nachos

Since my weight loss surgery, quick small bites have been my way of eating. Instead of heading for the boring stuff, I've decided to spice it up by adding a little flavor to all of my favorite recipes. Nachos is one of my fave's and I thought I would never find a vegetarian replacement that was unique and tasty until I came up with these. Jerked Sweet Potato Nachos are the best combination of sweet and spice. 

Jerk Nachos

To replace the meat for these nachos I used Seitan also known as Wheat Gluten. You can usually find this at a store like Trader Joe's, Sprouts, or HERE. There are so many uses for Wheat Gluten when it comes to meat replacement. One of which is vegan fried chicken (recipe coming soon). 

I've also tried plenty of different jerk seasonings and found that Spur Jerk and WalkersWood are the best alternative to homemade jerk seasoning.

So enough talking, let's get on with the cooking!

Jerk Nachos

Jerk Sweet Potato Nachos
Ingredients
  • 2 Sweet Potatos
  • 1 Package Seitan (original)
  • 1/4 cup Green Peppers
  • 1/4 cup Red peppers
  • 1/2 cup Yellow Onion
  • 1 Tb Sea Salt
  • 1 Tb Black Pepper
  • 2 Tb Smoked Paprika
  • 2 Tb Jerk Seasoning
  • 1 Tsps Crushed Pimento Seed
  • 1/4 cup Olive Oil
  • 1 Tsps Basil
  • 1 Tsps Onion powder
  • 1 Tsps Garlic powder
Instructions
Finely chop onions, peppers and set aside. Slice seitan into small pieces, add onions, peppers, garlic powder, onion powder, 1/2 tb salt, 1/2 tb black pepper and jerk seasoning. Mix and set in fridge for 30 minutes Wash and slice sweet potatoes in 1/4 inch thick slices. Season potatoes with smoked paprika, basil, 1/2 tb salt, 1/2 tb black pepper. Drizzle potatoes with olive oil and combine all ingredients so potatoes are covered. Heat oven to 400 degrees, place potatoes in oven and bake for 20 minutesHeat 1/2 cup olive oil in skillet. Stew seitan on medium heat for 10 minutes or until onions and peppers are cooked. Take sweet potatoes out of oven, make sure they are light and crispy. Top sweet potatoes with cooked seitan.Top nachos with your favorite topping like sour cream, chives, or cheese.

Callaloo Stuffed Peppers

A simple dinner with simple healthy ingredients is on the menu tonight. Did I ever tell you how much I love stuffed peppers. The first time I tasted them was when I was a little girl and my aunt made the most delicious baked peppers with ground beef, rice and black beans. I was thinking about those peppers and wanted to make a vegetarian version that is just as delicious. 

Vegan Stuffed Peppers

For this recipe we decided to use traditional Jamaican ingredients to stuff the peppers and make the rice to go along with it. The steps are simple and easy as pie.

Vegan Stuffed Peppers

Now that we have the jackfruit ready, let's add a simple slaw for added texture. This recipe is quick and easy.

Callaloo Stuffed Peppers
Ingredients
  • 1 oz Vegan Butter
  • 1/2 cup Sweet Onion
  • 1/2 cup Green Onion
  • 1 tsps Thyme
  • 1 tsps Crushed Pimento Seed
  • 1 Scotch Bonnet Pepper
  • 1 cup Callaloo
  • 2 cups Rice
  • 3 cups Water
  • 1 tsps Salt
  • 1 tsps Black Pepper
  • 2 Tb Granulated Sugar
  • 1/4 cup Coconut Milk
  • 1 can Canned Black Beans
  • 1/2 cup Finely chopped Green Peppers
  • 3 Peppers of your choice, split in half
  • 1 cup Parmesan Cheese
  • 1 cup Panko Bread Crumbs
Instructions
In a pot over a low flame, melt butter and saute onion, green pepper, green onion, thyme, pimento and hot pepper for 2 minutes. Stir ingredients lightly. Do not allow the scotch bonnet to burst in the pot. Add callaloo and continue to cook for another 5 minutes. Add washed rice to the pot with just enough water to cover the rice. Add salt, black pepper, sugar, coconut milk, and black beans. Stir to combine all the ingredients.Allow rice to come to a boil then reduce the flame to very low, cover pot and let simmer for 10 minutes. Stir rice to make sure it is tender and fluffy. If it seems like it needs more time. Cook for 5 minutes then turn off heat. Mix Parmesan cheese and panko bread crumbs in a bowl. Scoop rice mixture into peppers and top each pepper with Parmesan cheese mixture. Heat oven to 400, place peppers on baking tray, place in oven and bake for 20 minutes or until topping in golden brown.

Bumpin' Crab Cakes

When I started my vegan journey, seafood was one of the main foods I had a hard time giving up. I'm still on the fence about it but that's neither here nor there. I made it my mission to find a vegan replacement for some of my favorite seafood recipes. 

In my search I found Sweet Potato Soul which had a really great crab cake recipe. After a few tries, I ended up changing the recipe so much that I created my own and it was deeeeelicious! 

Vegan Crab Cakes

The main ingredient in these "crab" cakes is Hearts of Palm which is  a vegetable harvested from the inner core  of certain palm trees. You wouldn't think that a plant can taste like seafood, but Hearts of Palm actually has a distinct seafood flavor. Not fishy, more like shellfish which makes it perfect for recipes like crab cakes and even calamari. For this recipe, I loved using THIS brand the best. 

Just a note. I know some people use chick peas as a binder but I did not like the taste of chic peas in this recipe. I used The Neat Egg instead as a binder and it works perfectly. Easy peezy!   

Ok, let's get to the food......

Vegan Crab cakes

Bumpin Crab Cakes
Ingredients
  • 1 Can Hearts of Palm
  • 1/2 Cup Chia Seeds
  • 1 Cup Panko Bread Crumbs
  • 1/2 Cup Vegan Mayo
  • 1 Tb Dijon Mustard
  • 2 Tb Old Bay Seasoning
  • 1/2 cup chopped Scallion (green onion)
  • 1 Tsp The Neat Egg
  • 1 Tsp Dried Parsley
  • 1 Tsp Paprika
  • 2 Tb Fresh Lemon Juice
  • 1 Tb Red Pepper Flakes
Instructions
Open can and pour out water. Rinse the Hearts of Palm to minimize brine taste. In a food processor add the The Neat Egg, 2 teaspoons of water, chia seeds and hearts of palm together. Pulse just a few times to combine until it has a chunky consistency. You can also do this manually, just use a fork to combine everything in a bowl. In a large mixing bowl, combine the rest of the ingredients. Whisk until well combined. Now gently fold in Hearts of Palm in mixing bowl to combine. Taste for seasoning, add more if needed. Let it sit in the refrigerator for 15 minutes so the mixture is easier to mold when ready. Pour breadcrumbs onto a plate. Take mixture out of refrigerator and form small patties. Coat patties with breadcrumbs and set aside. Heat a large skillet with 1/2 cup of oil. Place crab cakes in oil and cook for 1 1/2 minute on each side until golden brown. Make sure not to overcrowd the pan. Place finished crab cakes on paper towel to soak excess oil. Add sour cream, guacamole or your favorite dipping sauce. Enjoy!

I added a simple dipping Horseradish dipping sauce to go with the crap cakes. 

3 Tbsp Horseradish  
1/4 cup sour cream
1 teaspoon Dijon mustard
1 Tbsp Vegan Mayonnaise
1 finely chopped green onion

Jack Fruit BBQ Sliders

Let's talk about these yummy jackfruit sliders. Jackfruit can be a scary fruit since it's the biggest fruit in the world and can weigh up to 80lbs. Yeah that's huge! You can definitely find smaller sizes in your local supermarket and can even get them in the can HERE. Jackfruit is really good for you and an excellent source of vitamin B6. So eat as much as you want! 

Jack Fruit BBQ Sliders

In the vegan world, jackfruit is a great replacement for pulled pork because it has the same consistency when cooked. The trick is you have to cook the jackfruit when it's young (not ripe). If you wait until it ripes, it will have a very sweet taste which is not good for this recipe. To stay on the safe side, I used Organic Jackfruit in the can. 

The one issue you may have with jackfruit in the can is the taste of the brine. I'll show you how to get rid of that awful taste in the steps below. Once you've gotten the brine out and seasoned the fruit properly, you'll have a recipe that's easy, versatile and the whole family will love it!

Jackfruit sliders

Jackfruit BBQ Sliders
The best replacement for pulled pork.
Ingredients
  • 1 Can Organic Young Jackfruit
  • 1 Tb Tamari
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 1 Tb Smoked Paprika
  • 1/2 Tsp Dried Parsley
  • 3 cups Water
  • 1 cup Apple Cider Vinegar
  • 1 cup BBQ Sauce
Instructions
Open can of jackfruit and empty in a large bowl. Separate seeds and pods from fruit by using a fork and shredding the pieces. You will see the seeds separate as you lightly shred. Rinse the jackfruit in a strainer to get most of the brine out. In a separate bowl, mix water and apple cider vinegar then pour the mixture on the shredded jackfruit and let sit for at least an hour. Rinse off apple cider vinegar mixture. Rinse at least twice. Season jackfruit with dry seasoning and let marinate for at least an hour. Marinate over night if possible to get all the seasoning in the fruit. Pour olive oil in a frying pan and heat to medium heat. Pour jackfruit into frying pan and toss for 1 minute. Add tamari to jackfruit and mix lightly. Turn down heat and let simmer for 30 minutes. Heat oven to 400 degrees. Spread jackfruit on a baking tray and bake for 20 minutes in oven. Remove tray out of oven and add BBQ sauce of your choosing. Put back in oven for 5 minutes. Remove jackfruit from the oven. Jackfruit should be a medium to dark brown and have a light crisp.

Now that we have the jackfruit ready, let's add a simple slaw for added texture. This recipe is quick and easy. 

Simple Slaw

Simple Slaw
Especially made for jackfruit sliders.
Ingredients
  • 1 cups Purple Cabbage
  • 1 cup Vegan Mayo
  • 1/2 Tb Apple Cider Vinegar
  • 1/2 Tb Pepper
  • 1 cup shredded Carrots
  • 2 cup Green Cabbage
  • 1/2 cup Green Apple sliced thinly
  • 1 Tb Dijon Mustard
  • 1/3 cup Sugar
  • 1/2 cup Vegan Mayo
Instructions
Mix cabbage and wet ingredients in a bowl. Add dry ingredients and mix well. Add directly to sliders or cover and let sit in refrigerator for 30 mins to let ingredients marinate a bit.

Sweet Banana Spice Fritters
A classic Jamaican recipe with a twist.
Ingredients
  • 3 Bananas
  • 1 cup Sugar
  • 1 cup Non- sweet Almond Milk
  • 2 cup Flour
  • 1/2 tsp Nutmeg
  • 1/2 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract
  • 1 Eggs
  • Powdered Sugar
  • 2 tsp Baking Powder
Instructions
Cover bottom of pan or use deep fryer to heat up 2 - 3 cups of oil. Keep oil on medium heat.Mash bananas in a bowl until they are creamy.Combine flour, baking powder, sugar cinnamon and nutmeg.Add bananas, eggs, vanilla extract and milk. Stir until the batter is a thick pancake batter consistently. If batter is too thick add more milk. Let batter rest for 10 - 15 minutesScoop spoonfuls of batter into oil and fry. Watch closely and turn fritters once they become golden brown. Pat fritters to rid of excess oil and let cool. Then sprinkle with powdered sugar.

Apple Spice Pineapple Compote

Apple Spice Pineapple Compote
A wonderfully fresh dipping sauce for your fritters.
Ingredients
  • 2 cups Fresh Pineapple Cubed
  • 3/4 cup Pineapple Juice
  • 1 cup Granulated Sugar
  • 1 Tbs Cornstarch
  • 1/2 cup Water
  • 1 Tsp Apple Spice
Instructions
On medium heat, combine chunks, sugar and juice. Stir until the sugar dissolves. Cook 5 minutes until chunks begin to soften. In a separate bowl combine cornstarch and water, wisk until thoroughly combined. Add cornstarch to mixture and bring it to a simmer. Add apple spice, stir and bring to a simmer. Cook until liquid is thickened. Turn off heat and transfer to a bowl to cool.
